Ingredients and quantity

  • Mutton – 1kg.
  • Onions – 150gms.
  • Chilli powder – 10gms.
  • Coriander powder – 20gms.
  • Cumin powder – 15gms.
  • Garam masala – 5gms.
  • Turmeric powder – 3gms.
  • Ginger paste – 10gms.
  • Garlic paste – 10gms.
  • Green chillies – 4nos.
  • Salt – to taste
  • Oil – 25ml.
  • Coriander leaves – garnish

Method of preparation

  1. Separate chopped onions into 2 portions – roughly 2/3 and 1/3 of the whole.
  2. Heat oil in a large pan, on medium flame, and add the first lot of onions – the 2/3 portion.
  3. Fry till golden-brown.
  4. Add the meat and fry till browned.
  5. Add all the powdered spices and fry for 2-3 minutes. Add salt to taste.
  6. Add the remaining 1/3 portion of chopped onion, ginger and garlic pastes and slit green chilly. mix well.
  7. Add water, stir and bring to a boil.
  8. Reduce flame to simmer and cook till the meat is tender.
  9. Garnish with coriander leaves.
  10. Gosht Dopiaza is ready.
